Because the meat is in a thermoform pack it is sealed airtight to give maximum shelf life. It is the oxygen in meat that gives it its vibrant, cherry red appearance. So as there is no oxygen the meat can appear pale/grey looking. Remove the meat from the packaging before cooking and allow it ‘bloom’ for 10 minutes at room temperature. The cherry red color will return.
