Cutting against the grain helps to ensure tenderness and generally makes for a better eating experience. It means you are slicing the muscle fibers (grain) into smaller pieces. If you cut along the grain (i.e. the same direction as the fibers), your meat can often feel fibrous or stringy to chew.
